super easy peppermint bark for the win :: #aSIMPLEchristmas kid friendly recipe

I am all about easy. Include the word “super” and I am ALL. IN. My mom used to make this as part of her Christmas cookie/pie/torte extravaganza (which she still does even though most of her children live in different states now….she doesn’t even care if they don’t get eaten. She just loves to bake). I can honestly say that I have never baked an actual batch of cookies “from scratch.” That gene just did not get passed down. But I love chocolate (especially white chocolate) and candy canes. So put them together and my holiday baking is done (sad but true).

Seriously though, this recipe is so easy and so yummy that no one will guess that it took you 20 minutes. It almost counts as a fun kid craft because they can really be a part of making this. My kids had the best time. Chiggity check it ::
Peppermint Bark
Ingredients:

1 24 oz. white chocolate chips
1 box mini candy canes (approx. 40)

Directions:

Unwrap candy canes (this in and of itself was a blast for my kids. Why, I have no clue). Make sure no wrappers inadvertently find their way into the candy cane dish (we learned this one the hard way). Smash candy canes to smithereens (we put the candy canes into three ziploc bags (one for each kid), used a meat mallet and a cutting board and went to town. Best day ever, they said). Melt chocolate chips at 30 second intervals until creamy and smooth. Slowly mix candy canes into melted chocolate. If desired, save some candy canes to sprinkle on top for some added crunch. Spread mixture onto a cookie sheet covered with wax paper until 1/4″ thick. Let cool in fridge for 45 minutes to an hour. Break into pieces and enjoy!

I am thinking of putting these into cute little baggies and passing them out to the kids teachers this year. The kiddos will love being able to say that they helped make them!

    Amusingly enough, my son made this with his class last week, so it is definitely 4 year old safe! I don’t like peppermint and chocolate, but my son said it was delicious!
