I have super fond memories of visiting my grandparents in Florida and helping prepare and eat this meal 🙂

My dad’s side of the family is from Spain, and I remember the very first time we had this visiting my grandparents. I remember sitting out on the warm screened in porch with my Grandpa and his brother tearing up bread for the migas. I remember just loving the garlicky bread and spicy sausage.

I love researching the history of food, and I found that migas were a staple dish of shepherds in Spain. When they would have a loaf of stale bread they would fry it up with most likely an animal fat and garlic. They would serve it with pork. It progressed through the years to include more of a spiced pork like chorizo sausage, and would be drizzled with olive oil to finish.

Find a good pasturing pig farmer near you if you can. Ask around at farmer’s markets. We are blessed with a farmer that not only offers quality pastured ground pork, but also in a chorizo style sausage. I am working on my own chorizo seasoning blend right now so I can save some money and just buy ground pork to season myself, but this pre-made is so delicious and very convenient!

Ingredients
  • ⅓ish cup friendly fat to cook the bread in (lard, butter, coconut oil)
  • ½ loaf of gluten free, sourdough, or sprouted bread, choppd or torn into pieces (About 3 cups. We love the gluten free Sammi’s Bakery bread.)
  • 7 cloves garlic, minced
  • 1-2 bell peppers of choice color, chopped
  • ¼ large Spanish onion, chopped
  • ½ lb ground chorizo sausage (from a trusted pastured pig farmer preferable)
  • Sea salt to taste
  • Drizzle olive oil over the top, and serve with a side of fried eggs if desired
Instructions
  1. In a large fry pan or skillet heat the friendly fat and add the chopped bread coating the bread in the fat.
  2. Add the garlic to the bread, along with about 2 TB of water and sprinkle sea salt to taste. Stir the bread/garlic mixture until the bread is toasted – about 10-15 minutes. Set aside.
  3. Add a TB of friendly fat back into the pan and sauté the onion and peppers with a pinch of sea salt until softened.
  4. Add the chorizo and cook through mixing into the veggies.
  5. Serve the chorizo mixture on top of the bread (migas) and with a side of fried eggs if you wish. I fry the eggs right in the sausage drippings so the color comes out beautiful!

Kitchen Tips:

  • This amount feeds my family of 4 for 2 meals – especially if we serve it with a side of eggs. Double up if you have a larger family or if you want more leftover. It reheats in the pan just fine the next day. The side of eggs really helps stretch the meat making the meal last longer for cheaper.
  • This meal works for breakfast or dinner!
  • If you are grain free you could serve this with fried potatoes instead of the fried bread.
  • Gluten free/quality breads can be expensive so you could even serve the chorizo mixture on top of a bed of rice if you wish to save the money.
  • Render your own lard! It is SO easy! And an inexpensive way of getting very friendly fats with loads of vitamins and brain nourishing fats into your family. Your pasturing pig farmer should have leaf lard available for purchase if you ask.

    This sounds and looks delicious! My husband is Portuguese, so he loves any meal with Chorizo. Unfortunately I don’t have a local pork farmer, but I occasionally pick up some at whole foods (not the best, but not the worst). Pinned to try asap.
