a simple recipe :: cast iron chocolate chip skillet cookie

When we bought our old farmhouse, it was filled with treasures!  We spent months before we moved in going through the stuff that had been left behind!  It was something we loved doing, and we sorted through what was good to keep, sell, donate, or get rid of!  I love the way we are making our home a combination of modern and vintage, and some of our favorite finds from this old house are on display or in good use!

One of my favorite finds was a set of old cast iron skillets.  Before we moved in I hadn’t really used cast iron much, but I looked up how to restore them, and now they are my every day pans!  I love the way dinner and breakfasts are prepared in them, and I use them all the time for cooking!  While I use them for many meals each week, one of our favorite things to make in them is a skillet cookie!  We enjoyed one this weekend, so here’s the recipe for you to try too!

Cast Iron Chocolate Chip Skillet Cookie

Ingredients

9 TBL butter, softened (save 1 to grease pan

1 cup sugar

1 TBL molasses

1 large egg

2 tsp vanilla

2 1/4 cups flour

1/2 tsp salt

1/2 tsp baking soda

1/2 cup semi sweet chocolate chips

1/2 cup milk chocolate chips

Preheat oven to 350 degrees.  Put one tablespoon butter in 9 inch- cast iron skillet and place in oven for 5 minutes while it’s preheating.

Remove after 5 minutes and make sure melted butter covers entire bottom of pan and sides.

Mix together butter and sugar with blender until creamy.  Add molasses, egg, and vanilla.  Mix until combined.

Add the flour, salt, and baking soda, and mix on low until incorporated.
Add chocolate chips and mix until combined.

Press cookie dough into greased skillet and bake at 350 degrees for 25 minutes.  Remove from oven and let set for 5-10 minutes. Serve warm with ice cream or a cold glass of milk.

We love this treat for special occasions, or a quick easy dessert when guests come over!  It reminds us both of the treasure this home is to us.

    WOW! now there’s a cookie! instead of baking a bunch of small ones, why not a big one 🙂 then add some ice cream or whipped cream on top….or maybe some caramel sauce. Delish! love the combination of chocolate chips too. definitely gonna give this a try
