a simple real food recipe :: traditional spanish migas and chorizo

Ingredients
  • ⅓ish cup friendly fat to cook the bread in (lard, butter, coconut oil)
  • ½ loaf of gluten free, sourdough, or sprouted bread, choppd or torn into pieces (About 3 cups. We love the gluten free Sammi’s Bakery bread.)
  • 7 cloves garlic, minced
  • 1-2 bell peppers of choice color, chopped
  • ¼ large Spanish onion, chopped
  • ½ lb ground chorizo sausage (from a trusted pastured pig farmer preferable)
  • Sea salt to taste
  • Drizzle olive oil over the top, and serve with a side of fried eggs if desired
Instructions
  1. In a large fry pan or skillet heat the friendly fat and add the chopped bread coating the bread in the fat.
  2. Add the garlic to the bread, along with about 2 TB of water and sprinkle sea salt to taste. Stir the bread/garlic mixture until the bread is toasted – about 10-15 minutes. Set aside.
  3. Add a TB of friendly fat back into the pan and sauté the onion and peppers with a pinch of sea salt until softened.
  4. Add the chorizo and cook through mixing into the veggies.
  5. Serve the chorizo mixture on top of the bread (migas) and with a side of fried eggs if you wish. I fry the eggs right in the sausage drippings so the color comes out beautiful!
