a simple real food recipe :: orange creamsicles

Picture 11710We officially start our summer break this week!

To be honest I’m looking forward to lazier mornings, barefoot babes, beach side lunches, and long afternoon naps 😉

It wasn’t like my first year as a preschool mom was that huge of a schedule change, but I am all about summer fun!

And summer means way busier kids burning off energy like crazy! Here is a fun afternoon snack for the babes to try to cool them off and nourish their bodies!

Orange Creamsicles
You’ll need:

  • 3 oranges, peeled
  • ½ cup organic whole milk, cream, whole plain yogurt, or whole coconut milk (If going with the dairy, raw is preferable. Or non homogenized, low pasteurized. If you don’t make your own coconut milk, then Native Forest is the only brand I know of that is in a BPA free container.)
  • 2-4 TB coconut butter, melted (NOTE: this is different than coconut OIL – the coconut butter is the “meat” of the coconut as well as it’s oil and it is FULL of nourishing fats, fiber, and nutrients! It is delicious! I get mine cheapest at our local health food store but I linked up so you could see what it looked like!)
  • 1-2 TB raw honey
  1. Melt the coconut butter and honey together over low heat.
  2. Blend the coconut butter/honey mixture with the oranges and milk until smooth.
  3. Pour into popsicle molds and freeze.

Kitchen Tips:

    • Start with less coconut butter to be sure the kiddos will eat it – amp it up as you can since this is a great place to get nourishment from, and it is SO good for them! It actually makes it pretty sweet and nice and creamy!
    • Add in some carrots for more orange color and nutrients!
    • Try some other add-ins based on your kid’s needs – coconut oil, probiotics, etc.
