turkey taco chili and jennie o + giveaway

Pumpkins, sweaters, bonfires, jeans, and boots!  Just a few of my favorite things about fall.  It actually has started to feel like fall here where we live, and I am loving every second of it! The leaves are just starting to turn colors and mornings and nights are crisp and cool!  I love the foods that we tend to enjoy during fall, and chili is just one of our favorites!  There are so many variations to the typical chili that we love and I’m excited to share one of my new favorites with you!

We’ve been using a lot of turkey in place of other ground meats, and I love the flavor that turkey adds to this chili.  Jennie O has an awesome variety of turkey products.  You can read about some of our other favorites here.

Turkey Taco Chili

• 2 lbs. ground turkey
• 1 Tablespoon olive oil
• 1 onion, chopped
• 2 cups water
• 2 chicken bouillon cubes
• 1 packet taco seasoning
• 1 can corn
• 1 can black beans
• 1 quart of salsa

Toppings:

Crushed tortilla chips
Shredded cheddar
Sour Cream
Avocado slices

Directions:
Using a large stockpot, sauté onions in olive oil until tender.  Add ground turkey and brown in pan. Add water and bouillon cubes and bring to a boil. Reduce heat to a simmer and add corn, beans, salsa, and taco seasoning. Let simmer for 10-15 minutes, stirring occasionally. Top with any and all of your favorites taco toppings!  Our favorites are these new Tostito rolls I found, sour cream, cheese, and avocado!

Other favorites for fall for us include meatloaf, spaghetti and meatballs, and sliders for football games.  We are loving using Jennie O turkey products for all these fall favorites. The flavor is excellent and we love having a healthy option! Check out more recipes at Jennie O.
