protein-packed {and super healthy} peanut butter cup smoothie bowl

I have a smoothie almost every day for breakfast. I love just about any kind of smoothie, but this is one that satisfies my sweet tooth, has no processed sugar and is packed with protein. It is super filling and keeps me full until lunch.

And thankfully it’s easy! I like to use simple, organic ingredients when I can and prefer not to use exact measurements (though I’ll do my best to give you a good estimate of what I use). You can easily add more almond milk to make this more of a sippable smoothie. But sometimes I like to force myself to sit down and eat breakfast and that’s when a smoothie bowl is handy. Plus, sometimes my kids just like to eat things that are pretty!

Let’s get to it!

Ingredients for smoothie: 1 frozen banana (any time I have bananas that are starting to get dark, I just peel and cut them and throw them in a freezer bag.  Love having them on hand), around 1/4 almond milk (or milk of choice), 1-2 T peanut butter, 1 T cocoa or cacao powder. Blend on high until a thick, smooth consistency. If it’s too hard on your blender, add some more almond milk. If you find it too thin, add a little crushed ice. Do whatever makes you happy to get it to the right consistency.

Toppings: Really, anything goes. Some toppings I love are sliced bananas, chia seeds, chopped dark chocolate or cacao nibs, peanuts, pistachios or other chopped nuts and, to really put it over the top in terms of health and protein, a crushed Wella Bar! Any flavor will work here. Peanut Cacao obviously goes with the peanut butter cup theme, but you really can’t go wrong. Just one Peanut Cacao Wella Bar will add 11 grams of protein to your smoothie bowl (making the bowl around 20 grams of protein, depending of course on which toppings you use).
