a simple recipe :: white chocolate cranberry pistachio bark

Ah, the delights of the holiday season. Chocolate, peppermint, hot cocoa with marshmallows. I love them all. But over the years, I have refined my tastes and now yearn for something new and different. My mom started making this recipe a few years ago and it has become my holiday favorite. Since it has both fruit and nuts in it, you can almost (ALMOST) convince yourself that it is healthy. It is super easy to make and took me all of 15 minutes. SIMPLE!

Ingredients:

1 lb. white chocolate morsels
1 1/2 tsp. vegetable oil
1/2 cup dried cranberries
1 1/4 cup shelled pistachios

Cooking directions:

Microwave chocolate morsels in 30 seconds increments until softened. Stir each time but do not melt completely. When chocolate is softened, add oil. Stir vigorously until all is melted and smooth. Quickly stir in fruit and nuts until well blended. Spread mixture on greased cookie sheet until approx. 1/2 thick. Allow chocolate to harden at room temperature. Once chocolate is hardened, break into pieces. Store in container at room temperature.
