a simple recipe :: salsa chicken

This week I decided to take a break from my “mom’s favorite recipes” theme and share one of MY favorite recipes. I have been making this for most of my married life and my husband and kids eat it up like candy every time. I originally found it on allrecipes.com but have been making it for so long I don’t even have to look at the recipe anymore. It is so tasty and maybe the easiest recipe out there for a delicious main course meal that is NOT made in the crock pot. The chicken is so tender and flavorful and you can make it with little prep time which is huge for me. I usually make it with Spanish rice and some crusty bread. Yum yum! salsa chicken

Ingredients ::

4 boneless chicken breasts, cut in half
1 packet taco seasoning
1 cup shredded cheese (or more, if you like cheese as much as I do)
1 cup of your favorite salsa (mine is Garden Fresh salsa but any variety will work)

Cooking Directions ::

Cut each chicken breast in half, making 8 strips. Sprinkle taco seasoning on both sides of chicken. Cover chicken with salsa (if you are using a fresh-made salsa variety like Garden Fresh, you may want to drain it first as it does become watery upon baking). Bake for 30 minutes at 375º or until chicken is fully cooked. Remove chicken and sprinkle cheese on top. Bake for an additional 5 minutes or until cheese is melted.
