a simple recipe :: roasted broccoli with garlic and parmesan cheese

PicMonkey CollageMy family loves broccoli. There are some weeks where we have it multiple times. We steam it, we cover it with cheese (everything is better with cheese), we put butter on it. So in the hopes of mixing it up a bit, I went to Pinterest. Oh, how I love Pinterest for recipes. I could spend all day perusing boards looking for something I can make to wow my family. This recipe fits the bill, with a few tweaks that I made to fit my peeps. I have found a few keepers on Pinterest but this is by far my favorite. I make it at least once a week, with delicious results every time.

Ingredients ::

2 bunches broccoli, cut into bite sized pieces
olive oil
salt
pepper
3-4 large garlic cloves, minced
parmesan cheese

Cooking Directions ::

Heat oven to 425º. Wash and dry broccoli. Then dry it again. This broccoli gets nice and crispy so it is important for it to be completely dry. Spread broccoli on baking sheet. I usually put aluminum foil underneath to help it get extra crispy….and to keep the post-dinner dish washing to a minimum. Liberally drizzle olive oil on broccoli. Sprinkle salt and pepper to taste (I just make sure there is a nice covering of each on top). Add garlic and toss to coat. Bake for 20 minutes or so. Now here is my favorite part. Drizzle another layer of olive oil on the broccoli, sprinkle parmesan cheese on top and mix it all together. Broccoli perfection.

Note :: The original recipe calls for lemon and pine nuts. I love pine nuts but I never remember to buy them so I have never tried that variation. I did add the lemon the first time I made this recipe and have not added it since. In my opinion it is sooooo much better without it. But if you love lemon, you may want to add it. Just a heads up!
