a simple recipe :: chicken noodle soup

Our weather has been up and down for the past few weeks!  We’ve been spoiled with a couple sunny 70 degree days at the end of February, and then March came in like a lion with a snow storm.  All of me is officially ready for spring now as both my husband and I spent the weekend not feeling so well with a cold that really hit us both hard.  I really can’t remember if we’ve ever been sick at the same time, but definitely not since we have had kids.  Let me just say that’s a whole new situation.  There is no resting with a 2 and 3 year old so we just took turns getting a chance to rest and making sure the kids were ok.

While we were sick, both of us just wanted something comforting to eat for meals, and nothing sounded better to either of us than some homemade chicken noodle soup!  Since I wasn’t feeling like spending a long time making soup, I was so happy to have my Instapot to make a quick meal.
 And before I share my recipe I should just share that while I debated getting one for a long time, I now don’t know what I would do without it.  I use it at least once a day!  I make a batch of yogurt every week.  Hard boiled eggs come out perfect with the Instapot, and I usually make up a couple pounds of shredded chicken to use throughout the week!  It’s been the best thing to have for quick weeknight meals too! I’ll share some more recipes in the coming weeks, but here’s the comfort food that got me through the past couple days!

Instapot Chicken Noodle Soup

Ingredients:

1 onion, chopped

1 cup carrots, chopped

2 celery stalks, chopped

3 TBL butter

1 lb chicken breasts

6 cups chicken stock

2 cups water

4 oz. egg noodles

salt and pepper to taste

1 tsp thyme

1 tsp parsley

  1. Turn Instapot to sauté mode and add butter, carrots, onions, and celery.  Cook and stir until vegetable become soft.  Add salt, pepper, thyme, and parsley.
  2. Pour in water and chicken broth and then add the chicken.  Set the Instapot for SOUP and cook for 8 minutes.  Let the pot NPR for 5 minutes, then Quick Release for the rest.
  3. Remove chicken breasts and cut into small pieces or shred.
  4. Add noodles. Return Instapot to sauté mode and cook for 5 minutes or until noodles are cooked.
  5. Add chicken back in.
  6. Serve with crackers or rolls.

There’s a quick simple recipe for some delicious soup whether you are sick or not!  It comes together in about 30 minutes, but the Instapot does most of the work!
