So if we have to deal with all this cold (and it is frigid here!), we might as well enjoy some warming and comforting meals for dinner, right?

And since we are making these meals from real food, there is *no* guilt! You can still keep your new year resolution and have chili!

I posted my original/traditional chili recipe last winter. We love white chicken chili as well though, and who doesn’t love a dump it all in the crockpot meal??!

Ingredients
  • 2-3 cups cooked white beans (Sprouted preferable for more nourishment and better digestibility – See Kitchen Tips for how to sprout your beans.)
  • 1-2 cups cooked chicken or turkey (See Kitchen Tips on how to crockpot a whole chicken and have leftover meat for dishes like this.)
  • 1 quart chicken stock (Homemade preferable for more nourishment! See Kitchen Tips for how to do this.)
  • 2-3 cups cream of chicken soup (Homemade preferable for more nourishment. See Kitchen Tips for recipe!)
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 yellow pepper, chopped
  • 6 cloves garlic, minced
  • 1 ½ cups organic corn (I get large bags of frozen organic corn at Costco)
  • 1-4oz can diced green chilies
  • 2-3 TB taco seasoning (I use my homemade blend listed in the Kitchen Tips – if you are using a packet of season you may want to start out with a small amount and add more to your taste.)
  • Sea salt/pepper to taste
Instructions
  1. Everything into the crockpot and turned on low for 8-10 hours! That’s it!
  2. Top with shredded raw cheese, avocado/guacamole, or sour cream if you wish!

Kitchen Tips:

    • Change up the veggies to your taste and what you have available! Get some jalapenos in there, or some different pepper colors!
    • If you want more heat add some jalapenos or more green chilis.
    • Double up and cook in your larger crockpot and freeze half of it!

    • HERE is my taco seasoning mix! Making your own allows you to avoid the MSG and other preservatives in the packets of taco season.
    • These crockpots with snap down lids are on my wish list. The seal stays better on them and makes for more even cooking and less mess.

    I made this a few days ago. Now, I’m not a great chef by a long shot, but I like to think I do a few things pretty well. My husband, however, thinks that THIS is the best dish I have ever made! It was a huge hit, and I loved it too. It is a perfect cold-weather recipe; I have a feeling I’ll be making this quite often in the winter! THANK YOU!!

    We love chili in my house and are always looking for healthier spins on comfort foods. This recipe looks delicious!
