a simple {real food} recipe :: cucumber watermelon breakfast smoothie {dairy free}

I think I need to grow some watermelon next year…we’ve picked one up almost every week since they’ve been out this summer! There is no greater summertime refresher than watermelon!

I made up this great smoothie one morning when it was too hot to cook, my freezer stock of pancakes was almost at it’s end, and we had had enough granola for a while 🙂

I will be doing a full post on my thoughts on smoothie making at some point, but for now enjoy this super refreshing breakfast smoothie sometime this weekend – and note all the important nourishing add-ins that they will never taste!

(I’m NOT much of a measure-er! I guesstimated about how much I put in 🙂 This is one adult portion – I split one of between the girls!)

Here’s what you’ll need:

2-3 cups watermelon

1 cup cucumber

2 TB flaxseed meal (or chia seeds)

2 TB coconut oil

3 pastured egg yolks (if not pastured eggs I would skip this part – see below for other options for healthy fat and/or protein.)

  1. Blend it up! That’s it!

Kitchen Tips:

  1. Other add-in options: Great Lakes Gelatin, probiotic powder, homemade whey, coconut butter…)
  2. If your coconut oil is solid when the weather is cooler, just melt it over the stove a little or it won’t mix in.
  3. Freeze it into popsicle molds!
  4. Read this and this on the benefits of coconut oil.
