I have been on a mission to create a bread maker recipe for gluten free bread over the last couple months. To be honest I have been somewhat of a failure – but I am definitely getting closer. Gluten free baking can be tricky!

So what have I been doing with all of my sunken disasters?!

Well for the most part they are just becoming bread crumbs stored in the fridge for meatballs, meatloaf, and other dishes. I have also done up some baked French toast a couple times for a great weekend breakfast change up! You can use whatever bread you can digest well! Enjoy!

  • 2-3 cups gluten free bread broken up
  • 4 eggs
  • 1 cup whole milk or cream
  • ¼ pure maple syrup
  • 1 TB cinnamon
  • 1 tsp aluminum free baking powder
  • ¼ cup cold butter
  • ¼ cup sorghum flour (could use other GF flour)
  • 2 TB tapioca flour
  • 2tsp cinnamon
  • 2 TB pure maple syrup
Instructions
  1. Butter or coconut oil a baking dish and spread the torn up bread into the pan.
  2. Beat the eggs, milk, ¼ cup maple syrup, 1 TB cinnamon, and baking powder and pour into the pan over the bread.
  3. In a small bowl, combine the cold butter, flours, 2 tsp cinnamon, and 2 TB maple syrup with a pastry cutter or your hands (it will be “pastey”), and scatter chunks of the streusel topping over the top of the bread/egg mixture in the pan.
  4. Bake uncovered at 350 degrees for 40-45 minutes – check it around 35 minutes in case our ovens run differently. Let it cool a few minutes before cutting.
  5. Drizzle whole yogurt, coconut butter, or pure maple syrup over the top if you wish!

Kitchen Tips:

    • Sami’s Bakery Millet/Flax bread is another great GF option if you are looking for one. It should be in most health food stores in the freezer section.
    • I get sorghum flour, tapioca flour, and aluminum free baking powder cheapest in bulk at our health food store – I always price compare with Amazon before I buy though since it can be different.
    • Leftovers re-heat in the oven beautifully!
    • This is a pretty starchy breakfast so I serve a small piece with a glass of whole milk and fried eggs or bacon for my family.
