  • 2-3 cups gluten free bread broken up
  • 4 eggs
  • 1 cup whole milk or cream
  • ¼ pure maple syrup
  • 1 TB cinnamon
  • 1 tsp aluminum free baking powder
  • ¼ cup cold butter
  • ¼ cup sorghum flour (could use other GF flour)
  • 2 TB tapioca flour
  • 2tsp cinnamon
  • 2 TB pure maple syrup
Instructions
  1. Butter or coconut oil a baking dish and spread the torn up bread into the pan.
  2. Beat the eggs, milk, ¼ cup maple syrup, 1 TB cinnamon, and baking powder and pour into the pan over the bread.
  3. In a small bowl, combine the cold butter, flours, 2 tsp cinnamon, and 2 TB maple syrup with a pastry cutter or your hands (it will be “pastey”), and scatter chunks of the streusel topping over the top of the bread/egg mixture in the pan.
  4. Bake uncovered at 350 degrees for 40-45 minutes – check it around 35 minutes in case our ovens run differently. Let it cool a few minutes before cutting.
  5. Drizzle whole yogurt, coconut butter, or pure maple syrup over the top if you wish!
