When you have kids, sometimes it’s a struggle to get a baby sitter and set up everything that is needed to get out of the house with just mom and dad.  Do you typically go out for Valentine’s Day?  I have a great idea, let’s say in and have some fondue.  Fondue isn’t something that we normally do at home, but since Trudeau has graciously sent me a fondue set, naturally it needs to be used at least once a week. Fondue isn’t only a date night thing, but it would be great for having friends over and having family over. Not knowing anything about how to make fondue, I was delighted to see there was a recipe booklet full of tips and techniques to LOVE to help me set up a great night.  Cheese fondue and chocolate fondue are first on my list to make.

Knowing that restaurants that are dedicated to fondue are expensive as all get out, this is a great way to keep the cost down and you can make anything you want.

Here is a recipe for making Cheese fondue that I will be trying:

  • 1 loaf (1 lb) French bread, cut into 1-inch pieces for dipping
  • 2 cups shredded Swiss cheese (8 oz)
  • 2 cups shredded Gruyère or Swiss cheese (8 oz)
  • 2 tablespoons all-purpose flour
  • 1 clove garlic, cut in half
  • 1 cup dry white wine or nonalcoholic white wine
  • 1 tablespoon lemon juice
  • 3 tablespoons kirsch, dry sherry, brandy or nonalcoholic white wine

Directions

  1. In re-sealable plastic food-storage bag, place cheeses and flour. Shake until cheese is coated with flour.
  2. Rub garlic on bottom and side of fondue pot, heavy saucepan or skillet; discard garlic. Add wine. Heat over simmer setting on fondue pot or over low heat just until bubbles rise to surface (do not boil). Stir in lemon juice.
  3. Gradually add cheese mixture, about 1/2 cup at a time, stirring constantly with wire whisk over low heat, until melted. Stir in kirsch.
  4. Keep warm over simmer setting. If prepared in saucepan or skillet, pour into a fondue pot or heatproof serving bowl and keep warm over low heat. Fondue must be served over heat to maintain its smooth, creamy texture.
  5. Spear bread and fruit with fondue forks; dip and swirl in fondue with stirring motion. If fondue becomes too thick, stir in 1/4 to 1/2 cup heated wine.

A great one to have dessert and share with the whole family is chocolate. With only 2 ingredients needed it’s easy and fast.  You can dip whatever you want in it.  Strawberries, angel food cake, pineapple and pound cake are a few of our favorites.
