Meal planning is important to me! I like to know what we are having throughout the week!  Some weeks look better than others, but with a new year comes a new resolve to plan well and healthy for my family.  I looked through some old recipes and found some new ones as I planned out the next few weeks!  I wanted to share with you a couple of our weekend meals!  Some are new and some I’ve posted, but they are all on my list of easy meals that everyone (well, I guess I should say almost everyone) will love!

Here’s our Saturday and Sunday breakfasts.

Baked Oatmeal

1 cup vegetable oil           2 TBL baking powderIMG_47171-300x300

1 cup sugar                        1 tsp salt

4 eggs                                 6 cups quick oats

2 cups milk                          ½ cup blueberries

½ tsp vanilla                    ½ cup raspberries

Topping:

1/4 cup brown sugar

1 tsp cinnamon

Whisk together oil, sugar, eggs, milk, and vanilla. Stir in baking powder, salt, and oats. Fold in berries. Mix brown sugar and cinnamon and sprinkle over the top. Pour in greased 9×13 pan. Let rest overnight. Bake at 350 for 40 minutes!

Overnight Egg Casserole

  • 2 cups cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 2 TBL butter
  • 1 lb. breakfast sausage, browned and crumbled
  • 1 cup mushrooms
  • 1 onion, chopped small
  • 8 eggs
  • 1 3/4 cups milk
  • 1/4 cup flour
  • salt and pepper to taste

Grease 9×13 pan.  Sprinkle cheese in pan.  Saute mushrooms and onions in butter until tender. Add cooked sausage. Spread over cheese.  Whisk together milk, eggs, flour, salt, and pepper. Pour over pan.  Refrigerate overnight. Bake for 30 minutes at 350 degrees.

Saturday night is football playoffs we will have company late afternoon for games and they’ll be here late.  We’ll probably just grab something light for lunch and then plan dinner and snacks later! Here’s a perfect game day soup and my favorite dip.

Taco Soup

Approximate prep time: 15 minutes
Cook time: 45 minutes stove top/4 hours crock pot
Ingredients:

  • 1 lb ground meat1 onion, diced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • ½ tsp salt
  • 1 large can crushed tomatoes
  • 15 oz can of chicken stock
  • 15 oz can of corn
  • 15 oz. can of black beans

Garnish (optional):

  • Crushed tortilla chips
  • Shredded cheddar cheese
  • Sour cream

First, brown the meat. You can use any ground meat really, but beef is my favorite for this recipe. Next, add the onions and cook until they are tender. From here it is really easy. You can put it in a crock pot or large pot for the stove.
Add crushed tomatoes, chicken stock, and spices (a taco seasoning packet can be substituted for cumin, chili powder, garlic, and salt) to the meat and onion mixture. If making on the stove, add in the corn and black beans too. If making in a crockpot save the corn and beans for the last 30 minutes of cooking. Bring to a boil and let simmer for 45 minutes. If using a crockpot, cook on low for 4 hours.27172720144_058911d82e

Spicy Corn Dip

  • 1 cup sour cream
  • 1 cup mayonnaise
  • 2 cans Mexican corn
  • 2 green onions chopped small
  • 2 jalapenos, seeded and chopped
  • 1 lb. shredded Mexican blend cheese
  • 1/2 tsp. garlic powder

Mix together all ingredients in a bowl and serve cold with tortilla chips.

    All of these recipes are terrific. The Overnight Egg Casserole would be something different for me to try one weekend!
