meal train :: organize a FREE meal calendar for a friend in need

I’m the administrative assistant for our church office as well as a stay at home mom.  I’m always looking for the most convenient and efficient way to get a job done.  In January we started using Meal Train and it has simplified the organization of giving and receiving meals.  If organizational stuff gets you geeked, this is the site for you.  It even syncs to your Google calendar when you sign up for a meal and you get reminder emails when the date for you to bring a meal arrives.  It also gives everyone the opportunity to add what meal they are bringing so the recipient doesn’t get 7 nights of lasagna.

Importance

During significant life events, schedules and routines are often disrupted and the cooking of a healthy meal may become very difficult. The organization of a meal train helps ensure that during these challenging times, a nourishing meal is provided to those in need. The meal train also allows for friends, family, co-workers, church members, neighbors, and community to show their support for those during significant life events. This sharing strengthens friendships, neighborhoods, and communities.

Process

The meal train is typically organized by a friend of the family (organizer) who has knowledge of the recipient’s meal preferences, allergies, schedule, calendar, and knows who should be included. With this information, the organizer creates a meal sign up calendar of the available days and known meal preferences. Then, s/he contacts friends of the recipient to let them know that a meal train has been created and to ask if they would like to participate in bringing a meal to the friend in need (recipient). The organizer keeps track of the days that are booked and what meals will be given and communicates the information to the meal recipient and other participants. Additional friends and family who would like to participate after the initial invitation contact the coordinator to learn the specifics of the meal train.  From Wikipedia

    Chicken Stuffing Casserole –
    Put 4-6 boneless skinless chicken breasts in a 13×9 pan sprayed with non-stick cooking spray.

    Pour 1 can reduced fat/sodium cream of mushroom soup over chicken.

    Pour 1 box of stuffing mix over soup.

    Pour 1 cup of reduced sodium chicken broth over stuffing mix.

    Bake @350 for 45-60 minutes.*

    *Recipe can also be cooked in slow cooker on low for 6 hours.

      Oh my goodness I’m going to try that tomorrow! I’m assuming I should used thawed chicken breasts? Sounds delicious!

        Ginny, yes, thawed chicken breasts. 🙂 You can add a can of mushrooms, too, but my husband doesn’t like them. Also, this recipe is 7 Weight Watchers points per serving.

    Turkey Veggie Chili – healthy, low fat, and freezes super well! It tastes better after sitting for a couple days in the fridge!

      Thanks Jaime, looks delicious. Going to share it with my mom too. My dad has a apple orchard “hobby” that has her up to her eyeballs with apples every fall. She’s always looking for apple recipes. I personally LOVE anything appleishious.

    The link above is my all time favorite recipe for Chicken Ranch Tacos. It is made with leftover rotisserie chicken (which I never know what to do with) and you can mix the chicken with the taco seasoning in a freezer bag and freeze it until you are ready to have Chicken Ranch Taco night or to have on hand to bring a meal to a friend on the fly! My only other tweaks are that we use flour tortillas and I like to make my ranch from the packets, it’s better than the bottled ranch.

    These will seriously be the BEST chicken tacos you’ve ever had. Even better if you have avocados on hand.
