There is just something about this time of year that I crave comfort food. It may be the fact that I am feeling buried in all this snow or that I’m officially tired of hearing the world “Snow Day!”.

The problem is that this also feels like our busiest time of the year. Between school and home work, work and gymnastics, the amount of time I have to slave away in the kitchen is pretty minimal. That is why I love my good friends at Red Gold Tomatoes!

They have, yet again, come to my rescue! Let me introduce to you a super easy but super yummy Classic Lasagna!

Using the Red Gold Crushed Tomatoes and the Red Gold Diced Tomatoes with Basil, Garlic & Oregano, my prep time for making a delicious lasagna is cut way down. As in, less than 20 minutes! But not at the expense of taste. The Red Gold canned tomatoes give the lasagna a delicious, home-cooked taste, just with less of the fuss. Leaving me more time to spend time with my kids!

Actually, because Red Gold Tomatoes allows me the was of open, add, mix, I was able to enlist the help of my daughters when making our lasagna. I didn’t have to worry about any chopping or cutting. Or visits to the emergency room. They thought it was so cool that they got to help with such a “fancy meal”.

Red Gold offers these delicious recipes on their website, including an Eggplant Florentine that looks really, really good! And, since we’re in the midst of another Polar Vortex, I see that dish hitting our table this weekend!

If you’re craving some delicious comfort food or just want an easy way to cut down on your dinner prep time but doesn’t cut down on the taste, be sure to check out the entire line of Red Gold Tomatoes!
