birthday week and birthday treats

Birthdays around our house are a big deal!  I love celebrating life and spoiling the one who’s having a birthday!  My husband’s birthday is this week, and I’ve started planning a fun week for our family to celebrate him and all he means to us.  I’ve been talking to my son about it and he’s so excited now too!  We talked and made a list of some of his “daddio’s” favorite things, and we will enjoy surprising him throughout the week with his favorite treats, things to do, and places to go!

While we do give small gifts to each other for different occasions, birthdays and Christmas aren’t really about getting/giving gifts, but more about finding ways to make someone feel appreciated.  So far our plans for spoiling the birthday guy include family day on Sunday which will include watching one of the football games at his favorite restaurant, a walk around the farm on one of the warmer days this week, a visit to his work for lunch, date night just the two of us, and a bag full of his favorites!  We started the week off with one of his favorite treats, so I thought I would share the quick and easy recipe with you here.

Cookie Cups

Ingredients

Refrigerated Cookie Dough (24 cookies)

24 Hershey Kisses (or PB cups)

Cooking Spray

Preheat oven to 325 degrees.  Spray mini muffin pan with cooking spray.  Place one cookie dough ball in each mini muffin holder. (I often use homemade cookie dough.  Place a tablespoon of dough in each.  I use either chocolate chip or peanut butter cookie dough.) Press the middle of each cookie dough ball down so that cookie dough spreads up the sides.  Place Hershey kiss or 1/2 mini PB cup in each cookie.  Bake for 16-18 minutes.  Let cool for 10 minutes then remove from pan.

Everyone loves these cookie cups!  You can get fancy and drizzle chocolate over the top and add some holiday sprinkles.  We usually just leave them like this and eat way too many of them!  We enjoyed this start to the birthday week, and look forward to the rest.
