As someone who grew in to a peanut intolerance as an adult I can tell you the exact last time I ate peanuts. It had taken me years to identify my intolerance and then a few more years to really give up peanuts because, quite frankly, the combination of chocolate & peanut butter is one of God’s great gifts. I still miss many of the delicious peanut butter and chocolate treats that I used to enjoy and am always glad to discover a new “almond” version of old favorites.

As I sit here snacking on my new Almond Butter Muddy Buddies (also known as puppy chow or puppy food) I’m pretty darn excited. Not only was this slight modification to the recipe from the Chex Cereal website super easy, it was a HUGE hit with my family – including the peanut butter lovers who usually turn their noses up at my almond butter offerings. Thanks to my friends at General Mills for the inspiration and box of Chex to enjoy… stay tuned for some other fun with Chex Mix coming soon.

Here’s the recipe I used to make this sweet treat…

Ingredients ::

  • 9 cups Rice Chex
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup almond butter
  • 1/4 cup butter
  • 1 tsp. vanilla
  • 1 cup powdered sugar

Directions ::

1) Measure the cereal in to a large mixing bowl and set aside
2) In a microwave safe bowl, heat the chocolate chips, butter, and almond butter uncovered on high for 1 minute and then stir. Heat for about 30 seconds longer or until the mixture is smooth in texture. Stir in vanilla.
3) Pour chocolate mixture over the cereal and mix until cereal is evenly coated with mixture.
4) Put 1/2 of the mixture to a gallon size resealable bag and add 1/2 cup of the powdered sugar. Seal the bag and shake to mix well. Once the cereal is well coated with the powdered sugar, repeat with the other half of the cereal mixture and the remaining 1/2 cup powdered sugar.
5) Spread on wax paper to cool and store in a sealed container in the refrigerator.

Tips ::

  • Add some cinnamon to the chocolate mixture for a more complex flavor combination
  • Use Corn Chex, Chocolate Chex, or one of the limited edition speciality flavors for another unique flavor.
  • The original recipe from Chex called for 1 1/2 cups of powdered sugar – feel free to add extra if you would like. I only had 1 cup on hand and found that it was just as delicious without the extra powdered sugar.
  • If using a “natural” almond butter make sure to mix it very thoroughly before using for the recipe

    I would have never thought to make a Chex Mix with almond butter…that sounds tasty.

      I had been toying with the idea for a while and am glad I finally decided to give it a go! Perfect snack for these late nights of present wrapping and holiday prep.
