a simple recipe :: pepsi pot roast

IMG_2446Can I get a round of applause for whoever invented the crock pot? Seriously, what an amazing device. You throw things into it in the morning, let it sit all day, and come home to a delicious dinner at night. Bravo! Now that I am a working mama, my crock pot is my new best friend. When I get home from work, the last thing I want to do is figure out dinner plans much less take the time to make it.  One of our favorite winter comfort meals is a flavorful pot roast with lots of veggies thrown in.  We have narrowed down our list to a select few repeat recipes that are a hit every time. This is one that I originally found when searching for new recipes on the internet. My dad is a HUGE Pepsi fan and I wanted to try this out for when he and my mom came over for dinner. It was an instant success in our house and I have made it many times since. It is super easy and the results are amazing!

Ingredients:

1 pot roast, chuck, bottom round, rump, etc., about 3 to 4 pounds
1 envelope dry onion soup mix
1 can cream of mushroom soup
12 oz Pepsi
1 pkg baby carrots (more or less to your tastes)
2-3 stalks celery, chopped
1 red onion, chopped

Cooking Directions:

Sear meat by browning on all sides. Add vegetables, Pepsi, cream of mushroom soup and dry onion soup mix. Cook on low for 8-10 hours.
