a simple recipe :: no bake cookie bars


While I’d like to say I always plan ahead and am prepared for everything, life happens and things come up leaving me rushing trying to get things done and get things made on time!  This weekend was one of those times as we were finishing up a busy week and heading into a busy weekend.  I had desserts I was supposed to bring for 2 different events and not a lot of time to make them.  I usually have a couple standby recipes for times like this that I always make.  Recipes I know will turn out great and not take up a lot of time.  One of those is no bake cookies.  I decided to try a little variation on these this time since I didn’t think I would even had enough time to let them set before I had to put them on the plate and head out the door.  So this time I tried No Bake Cookie Bars!  They were a big hit and they gave me a few extra minutes too since the bars could “set” on the way to our dinners!

Here’s the recipe for one of our new favorite desserts:

NO BAKE COOKIE BARS

Ingredients:

2 sticks butter

4 cups sugar

1/2 cup cocoa

1 cup milk

1 cup peanut butter

6 cups quick oats

1/2 cup coconut

Melt butter in large pot.  Add sugar, cocoa, and milk and bring to a boil.  Boil for 1 minute stirring the whole time.  Remove from heat and stir in peanut butter, oats, and coconut. Pour in 10×15 jelly roll pan.  Let set for at least 30 minutes.  Slice and serve.

When you put chocolate, peanut butter, and oatmeal together you really can’t go wrong! These bars are absolutely delicious! This recipe serves a big crowd since these bars are rich and only takes about 10 minutes to make! You can cut it in half and make it in an 8×8 pan too if you have small group. I hope this recipe is loved by your family and friends as much as is was by ours.
