So, being summer I try to make my dinners as easy as possible. Playing outside and other adventures take precedence over food prep time but I still want to put a hot meal on the table for my family. Here’s a new recipe I came up with that is easy to prep and was a hit with everyone in my family.

Cinnamon Peaches & Cream French Toast Bake ingredients

Ingredients ::

  • 1 loaf French bread
  • 4 Tbsp. butter, melted
  • 1/2 cup brown sugar
  • 12 eggs
  • 1 cup half & half
  • 1 tsp. cinnamon
  • 1 lb.fresh or frozen peaches, sliced

Instructions ::

  1. Mix melted butter and brown sugar together and spread evenly on the bottom of a 9×13 pan
  2. Cut loaf of French bread into bite sized pieces and add to pan
  3. Mix eggs, half & half, and cinnamon together and then pour over bread
  4. Lay peach slices on top of bread/egg mixture. It’s okay if they are frozen, the juices will just seep into the French toast as they thaw in the fridge
  5. Cover and let it all set in the fridge for 8-12 hours to give the bread a chance to absorb all the egg/half & half mixture it can hold
  6. Preheat oven to 375 degrees and then uncover and bake for 30-40 minutes, or until top starts to puff up and bread pieces begin to ‘toast’
  7. Once done remove from oven and let it sit for 5 minutes before serving
  8. Enjoy!

Tips ::

  • Top with fresh whipped cream, other seasonal fruit (my family enjoyed mashed strawberries), or maple syrup
  • This is a great recipe to prep the night before so you can have a delicious and easy breakfast!
  • Add fresh blueberries to the bread mixture or topping for a delicious and fun flavor combination.
  • My family of 4 ate half a pan of this for our meal so plan accordingly.
  • Bake times may vary depending on the type of cookware you use (I prefer glass) as well as your oven and location. Regularly check for doneness after the 30 minute mark to find your perfect bake time.

Who else wants an easy meal come Saturday morning after staying up for fireworks?

    Now this would get me out of bed! YUMMY! Easy to make too, maybe I can whip me up some of this this weekend. And peaches have been super cheap lately.
