I am not much of a salad eater in the winter – I don’t even crave it. But right about May I literally salivate for fresh salads almost every day. I LOVE what eating with the seasons does to your natural instincts. And I love listening to my body and what it needs – our bodies are so smart. Rotating food is a good thing – giving our guts a break from certain things while we “stock up” on others. I don’t even digest raw veggies that great most of the year – but for some reason in the summer I can have fresh salads every day without a problem.

Thousand Island dressing is one that I grew up on and still love the flavor of! This dressing tastes just like it, and you’ll be skipping out on the rancid PUFA oils, soy, and other preservatives and colors that will just ruin your health and metabolism.

Try it out and let me know how the family likes it – I bet they won’t even know the difference if you already love store bought Thousand Island! This one isn’t one of my hubs favs (he is such a Ranch guy!) but my girls will eat bowl after bowl of salad with this dressing!

Ingredients
  • 1 cup whole sour cream (If you are dairy free use my homemade mayo!)
  • ¼ cup organic ketchup (Watch those ingredients!)
  • Juice of 1 lemon (about 2-3 TB)
  • 1- 1 ½ TB raw honey or organic pure cane sugar (Could use sucanat although it will change the color of the dressing)
  • ¼ cup finely chopped pickles (I like using Bubbies so we get the natural fermented probiotics!)
  • 1 tsp onion powder
  • ¼ tsp sea salt
  • ⅛ tsp pepper
  • Thin it out to your liking with water or whole milk if you wish – I usually leave it as is.
Instructions
  1. Mix everything together in the container you want to store it up in! That’s it!
  2. Store for weeks in the fridge.

Kitchen Tips:

    • This is great as a sandwich condiment as well as a dressing for salads!
    • If you are dairy free try using my homemade mayo instead of the sour cream!
    • I like using the whole Daisy sour cream since it has the least amount of other added ingredients and uses plain whole cream – not skim.
    • Wash those veggies up with this great DIY Veggie Wash! I  love using my salad spinner – so quick and easy!
