Today is Saturday. A day of freedom from punching a clock, 30 minute lunches and counting down to 5:00. And hopefully, freedom from the dinner time scramble– you know, the last minute running around trying to figure out what the heck to put on the table. That’s what I love most about the crock pot- not having to worry about what’s for dinner. Tonight, I am making a side dish in my crock pot that will be the perfect compliment to the chicken (on the grill, of course!) I am planning to make. I originally found the recipe here. Bookmark it so you can make it over and over!!
Ingredients ::
2 lbs red potatoes, cut into wedges
1/4 cup finely chopped onion
1 1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
2 Tbsp butter, cut into 1/8 inch pieces
1/4 cup grated Parmesan cheese
Directions ::
Layer potatoes, onions, oregano, salt, pepper and butter in crock pot. Cook on high for 4 hours. Place potatoes in serving dish and sprinkle with cheese.
