black bottom cupcakes :: birthday cupcakes since the 90’s

It’s been a bit of a birthday season over here. Our oldest son turned 14 and our daughter turned 12. We let them pick where they want to eat out. This year we enjoyed Benihana’s, which was a treat since it wasn’t open last year. After dinner we hit the drive in movie theater. It was a fun way to celebrate birthdays as a family.

Their birthdays are a week apart so we’ve been baking up birthday treats to pass out at school. My mom always made Black Bottom Cupcakes to bring to school and the tradition has carried on. A friend from junior high saw the cupcakes on FB and said, “are those the ones your mom always made?” She remembered them because they are that good!

I hope you find this cupcake recipe as delightful as we do! They get more moist on the second day! Quite enjoyable.

Box of dark chocolate cake mix
  • Ingredients to prepare cake mix
  • 1 8oz. package of cream cheese
  • ⅓ cup sugar
  • ⅛ tsp. salt
  • 1 egg
  • 1 cup chocolate chips
  • Favorite frosting
Instructions
  1. Prepare cake mix according to the directions on the box.
  2. Fill cupcakes about ⅔ full with batter.
  3. Soften cream cheese and mix together with sugar, salt, egg, and chocolate chips.
  4. Add a spoonful of this mixture to each cupcake.
  5. Bake as directed on cake mix box.
  6. Frost when cooled with your favorite frosting.
