1 cup pumpkin puree (homemade or canned – see Kitchen Tips section for a link to EASY homemade!)
2 tsp cinnamon
2 tsp ground ginger
½ tsp cloves
½ tsp nutmeg
¼ tsp all spice
2-4 TB pure maple syrup
Whole cream to stir in (Optional – but so good! Just be sure it is from a reliable source and never ULP.)
Instructions
The night before, put the oats and lemon juice in a small mixing bowl and fill with water to cover. Put the bowl in a warm spot in the kitchen overnight to soak. This soaking process reduces the phytic acid in the oats making them easier on the tummy to digest. It also makes them cook WAY fast!
In the morning, drain the oats and put them in a pot with about 2-3 cups of water.
While the oats are coming to a boil, add the pumpkin and spices and stir in. Cook a few minutes until your desired consistency (if you like it real thick just cook it longer – runnier don’t cook it as long).
Stir in your cream if you wish! Top with roasted pumpkin seeds from making your pumpkin purees if you have them!
