  • 1 cup rhubarb, coarsely chopped
  • 2 cups strawberries, no need to chop
  • 3 TB water
  • ½ cup whole heavy cream (Raw preferable, but at least organic and not ULP)
  • 2 tsp pure maple syrup
  • ½ tsp vanilla extract
Instructions
  1. Put the rhubarb, strawberries, and water in a small sauce pan and bring the heat up to medium/high. Use a potato masher to squish the strawberries and their juices out.
  2. Keep the strawberry rhubarb mixture at a low simmer for about 5 minutes until the rhubarb is soft.
  3. While the strawberry rhubarb mixture is cooking, use a hand beater and whip the cream, syrup, and vanilla extra for about 2 minutes to make whipped cream.
  4. Pour the cooked strawberry rhubarb mixture into a blender and puree – taste test and if it is too tart you can add a TB of honey ;)
  5. Fold the strawberry rhubarb puree gently into the whipped cream and pour into popsicle molds to freeze.
