a simple real food recipe :: potato soup

  • 4-6 strips pastured bacon (depending on how much you like – we love our bacon so I opt for more!)
  • 2 leeks, chopped
  • 2-3 cloves garlic, chopped
  • 1 ½ quarts chicken stock
  • 8 small/medium red or yellow potatoes, chopped
  • 1-2 cups whole milk or coconut milk (for the whole milk, raw is preferable. Or low pastureized, non homogenized. Never ULP. See Kitchen tips for a great coconut milk recipe if you are dairy free – you could skip this ingredient if you are dairy free as well).
  • Sea salt/pepper to taste
Instructions
  1. In a soup pot, fry the bacon. Once it is cooked, set the bacon aside but keep the bacon fat in the bottom of the pot.
  2. Saute the leeks in the bacon fat with a pinch of salt for a few minutes.
  3. Add the garlic and cook for a minute.
  4. Add the stock and potatoes and bring to a boil.
  5. Reduce to a simmer until the potatoes are cooked through about 10 minutes.
  6. Turn off the heat and add the milk.
  7. Puree with hand held blender or in a blender
  8. Add sea salt and pepper to taste, and chop up the bacon for stirring in or for garnish on the top – your choice!
