a simple real food recipe :: homemade potato chips

Author:
Ingredients
  • Potatoes sliced thin – enough to feed your crew (I usually do 3. Russets are the “usual” potato used for chips but I get whatever is on sale)
  • ¼ to ⅓ cup friendly fat to cook in (Pastured lard, butter, coconut oil. I like frying in lard the best or a combo lard and butter)
  • Sea salt/pepper to taste
Instructions
  1. Get the friendly fat nice and hot and lay the potato slices down in a single layer. I usually have to do a few batches in my fry pan so they aren’t crowding.
  2. Flip them after a few minutes and cook until they are browned.
  3. Season with salt/pepper to taste after transferring them out of the pan.
